My Current Go-To Autumn Recipes
The air is changing out there! Just stepping outside makes me hungry for something hot and/or sweet.
Because of this, I’ve been adding to my recipe bookmarks like crazy. I’m gonna share some of my tried-and-loved favorites with you.
October, November, and even into December. Let’s keep our kitchens cozy this season!
Sheet pan meals rock. Especially when they come out looking this impressive! I’m a sucker for salmon. Add in those sweet potatoes and you’ve got a rich, delightful dinner with fabulous fall vibes. The honey and rosemary tie everything together so beautifully. You’ll be thinking about this one for a good few days.
Brown Butter Pumpkin Snickerdoodles
What to say about the perfect autumn cookie? Just make these. It’s got pumpkin. It’s got cinnamon sugar. And let’s be real; if a dessert recipe calls for browned butter you know it’s going to be a winner.
You actually can’t go wrong with this recipe. The ingredient list might look a little long and there are a couple things to chop, but you also get to throw in full cans of cannellini beans and diced tomatoes and an entire carton of chicken broth etc. The fresh veggies and noodles make it so delicious, but my favorite part of this soup is the shredded parmesan cheese on top that melts right before we dig in. So satisfying.
I’ve made these cupcake sized desserts a few times now and they’re always a hit! The crust is arguably the best part of a pumpkin pie, so this easy-serve method really is such a great idea. Follow these directions, or do what I’ve also done before and combine this buttery crust recipe and this amazing pumpkin pie filling recipe. Such a classic taste. (I accidentally forgot one egg the first time and I thinkthey might have turned out better that way? Don’t come for me I don’t know the science behind it).
Soft and Chewy Oatmeal Cookies
I’ve tried a good few oatmeal cookie recipes. Many didn’t fulfill my dreams the way that this recipe did. I feel like the presence of nutmeg more than qualifies this as an awesome autumn recipe. The key is to underbake slightly so that they get firm while cooling and not while cooking. This guarantees a soft, buttery, make-you-melt oatmeal cookie. Absolutely double the recipe for these. Oops! They’re already gone!
When I say this chicken pot pie has been on repeat at my house, I’m being so honest. I’ve already brought it to two family events and I plan to make it again when my next door neighbor has her baby. Any day now! I’ve been using two round glass pie dishes instead of one big casserole dish and they come out so adorable. We might be addicted.
The fastest way to indulge in that fall feeling is to bring in all the apples! We moved to a house with established apple trees in our backyard and we’ve been surprised by the sheer amount we now have to find a use for. This simple dessert makes for the best conclusion to any dinner, or by itself if you just need something sweet to eat during a Harry Potter marathon.
Slow Cooker Garlic Herb Pot Roast
Cold nights call for dinners like this. Follow this recipe and you’ll be expecting a food baby. I know we can’t all have a father-in-law who makes the best ever soft and crispy sourdough bread to go with it, but I would still recommend finding some anyway. No better tool than warm bread to clean the potatoes and gravy off of your plate!
Chewy Brown Sugar Maple Cookies
These are somewhat officially my husband’s favorite cookies that I’ve ever made. The secret ingredient that makes them taste so special? Apple butter.
